Okay, so you may be saying, “Who let Claire cook? This looks like shit.” First of all, thank you! Second of all, this is actually an amazing pre-workout snack. It has a lot of simple sugars to get you started, and some protein so it gets you going. I really do not know what you need for a pre-workout, to be honest. Either way, this is a good snack for the summer also because it is a frozen peanut butter banana bowl. Intrigued now? If not, you can kindly leave!
Serves 2
Ingredients:
1 frozen banana
1 half-cup of vanilla soy milk
1 heaping scoop of peanut butter powder (can be replaced with 1 tablespoon of regular PB)
Combine the frozen banana, the soy milk and the peanut butter powder in a blender until somewhat chunky. You want the mixture to be a bit thicker than a smoothie, so you can eat it with a spoon. If you mess up, no worries, add a few cubes of ice or if you feel inclined, some greek yogurt. If you do want it thinner, add a splash a bit more soy milk in there.
Another thing that is cool to do with this recipe is freeze it! It is like vegan ice cream! Pour the mixture into an 8×8 parchment paper lined pan and freeze for two hours. Then scoop. It is delicious and is low-fat. I can eat an entire container of that stuff it is ah-mazing.
